Heyo!

What’s new with you guys? I’m still over here enjoying the regular life… you know… the one without mountains of homework and classes to attend on top of the working mom gig. It’s glorious. 

But when it comes to dinner…I still prefer quick and easy. Like, SUPER easy. My husband can make homemade alfredo sauce… I can dump a lot of ingredients into the crockpot and leave it for half a day and make something yummy. I’ll let you decide which superpower is better…

You may have heard me mention before that I am trying to overcome my natural dislike for cooking in an attempt to avoid so much processed food. Well, the crockpot is my best friend, friends. My latest invention…

Chicken Tacos.

And they are seriously SO good. So soooo good. I’ve made them more than once… so I promise that the first time wasn’t just a fluke either.

They’re moderately healthy (depending on your choice of toppings) and super crazy busy mom friendly.

Here’s what you need:
+Chicken Breast
+Picante Sauce (I use 1 jar for 3 breasts)
+Minced Garlic
+Canned Corn
+Taco Toppings/Supplies (tortillas, cheese, sour cream, lettuce if that’s what you’re in to…) ew.
Yes I’m serious, I don’t like lettuce. No, I don’t like salad or have it on my tacos. Why are those always the first 2 follow up questions? Ok, I can handle ONLY the dark green kind in my salad, and I love me some spinach.

Chicken IN the crockpot on low.

ct2Picante Sauce and garlic go in right away too. Cook on low for hourssssss. My chicken is usually cooked completely within 3 or 4 hours (my crockpot is a boss) but I’ve left it for like 6 hours before and it was still amazing.

About an hour before I’m ready to eat I throw a can of corn in there too. And I use 2 forks to shred all of the chicken breasts.

AAAAND that’s all! If I want it extra spicy I top it with Hungarian wax peppers (because I’m obsessed with them) and maybe come cayenne pepper. But usually not, because I’m not trying to melt my children’s taste buds.

But there you have it… seriously simple dinner idea. Cheap, unprocessed, and easy peazy.

    I am all a-board the crock pot train and I can’t wait for fall to get here when it’s more weather acceptable to eat soups and such 😉 This will definitely go to pinterest and be added to the rotation.

      I’m also loving my crockpot lately! SOOO easy. Fall is my favorite too, even though I live in FL and Fall is basically a little bit less hot summer. haha

    My kind of recipe! I’m trying to make more meals too, but they are more of the semi-homemade variety. These look awesome! So funny about the lettuce. My son won’t touch it either. Or my Father-in-law.
